This cooking group will meet on the 2nd Thursday of every month. It is a place to meet as friends, get new recipes and maybe even learn some new cooking skills.


Marshmallow Sauce

1 cup sugar
1/2 cup hot water
2/3 cup light corn syrup
2 egg whites
1/4 teaspoon vanilla
dash of salt
1/4 cup mayonnaise
1 tablespoon grated orange grind

Combine sugar, corn syrup, and hot water. Heat, stirring until sugar dissolves. Then boil, without stirring, to firm ball stage (244 to 248 on candy thermometer). Beat egg whites to stiff peaks. Slowly add hot syrup, ebating at high speed until thick and fluffy. Add salt and vanilla. Gently fold in mayonnaise or orange rind. If thicker than desired, fold in 1 or 2 Tblsp mayonnaise, or 1 or 2 tsp water. Keep refrigerated until served.

  1. Sorry, it's supposed to say 'beating', not 'ebating'. Unless you want to ebate it too. That might taste good. :)

    We typically serve this with fresh pineapple. It would probably be good with strawberries and other fruit too.

    The first time I made this, it didn't go so well. Here are some tips I've figured out that make it a ton easier:

    It'll take probably 5-10 minutes of boiling to get to firm ball stage. If you don't have a candy thermometer, have a cup with ice cubes in water nearby. With a spoon scoop up some syrup and drop it in the water. If you can gather the syrup together in a ball, (still slightly sticky but staying together in ball form) it is ready.

    I beat the egg whites while the syrup is boiling and get everything ready so I can do everything quickly once the syrup is in firm ball stage.

  2. This was delicious! I'm used to the recipe using marshmallow cream & whipped topping so it is really nice to have a recipe where I know all the ingredients. The pineapple was wonderful with it but I know it would be good with most other fruits as well. ;~).
