Five minute ice cream

2/3 cup whipping cream
1/2 cup sugar
10 ounces frozen strawberries

Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

Salted Caramel Budino

In clear cups -layer chocolate crumbs, pudding, salted caramel, whipping cream and sprinkle with remaining chocolate crumbs.

Chocolate crust and topping

1 cup finely ground chocolate cookie crumbs (such as Nabisco Famous Chocolate Wafers; about 20 cookies)

2 tablespoons unsalted butter, melted

1/8 teaspoon kosher salt

 

Pudding

1 4-serving size box of instant chocolate or vanilla pudding

1 cup cold water

1 14-oz. can sweetened condensed milk

1 pint whipping cream

1/3 cup powdered sugar

In a medium bowl, combine pudding mix, cold water, and sweetened condensed milk. Mix well and place in the refrigerator to chill for a few minutes. In another bowl, whip 1 cup of whipping cream until soft peaks form.  Gently fold the whipped cream into the pudding mixture until well-combined. 

Prepare sweetened whipped cream with the remaining whipping cream and 1/3 cup of powdered sugar and place on top of caramel sauce in cup.

 

Salted Caramel Sauce

Ingredients:

1 cup sugar

1 1/4 cups heavy cream

1/2-3/4 teaspoons sea salt

1 1/2 teaspoon vanilla

Directions:

1. In a large heavy pot, spread sugar in a thin, even layer. Turn burner to medium and heat until parts of the sugar begin to bubble and liquefy.

2. Gently stir, making sure un-melted sugar comes in contact with the greatest heat source. Continue, stirring occasionally   until all the sugar is melted.

3. Meanwhile, heat cream in the microwave or over the stove.

4. When the sugar is completely melted and has turned an amber color, remove from heat. Whisk in 1/2 the warmed cream. The mixture will bubble. Whisk in remaining cream until smooth.

5. Stir in salt and vanilla. If any caramel has hardened, simply place over heat and re-melt until smooth.

6. Store in an airtight container in the fridge indefinitely.


Coconut Waffles

1 3/4 cups all-purpose flour
2 tablespoons sugar
1 tablespoons baking powder
3 eggs
1 14 ounce can unsweetened coconut milk
6 tablespoons butter, melted
3/4 cup coconut
1/2 cup chocolate-flavored ice cream topping
1/2 cup chopped toasted almonds
Sweetened whipped cream or powdered sugar (optional)

1. In a medium bowl combine flour, sugar, baking powder, and a dash of salt. Make a well in center of flour mixture; set aside. In another medium bowl lightly beat eggs; stir in coconut milk and melted butter. Stir in coconut. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy).
2. Pour 1/2 cup batter onto grids of a preheated, lightly greased waffle maker. Close lid quickly, do not open until done. Bake according to manufacturer's directions (about 3 minutes or until golden brown). When done, use a fork to life waffle off grid. Repeat with remaining batter. Drizzle baked waffles with topping, sprinkle with almonds, and top with whipped cream or dust with powdered sugar. Serve warm. Makes 8 waffles.

Cookie Wafer Dessert

1 package Nabisco Famous Chocolate Wafers
8 oz cream cheese, softened
1 1/2 cups powdered sugar
1 8 oz carton whipping cream
1 tsp vanilla

Whip the cream until it forms stiff peaks. Add softened cream cheese, powdered sugar and vanilla and mix together until smooth. Spread on one side of cookie, pressing the second cookie to the first to form a sandwich. Ice the outside of the second cookie, pressing a third cookie on the end and continue icing and stacking the cookie end on end, so they form a line. Use the remaining mixture to cover the outside of the cookie log. CUT AT A DIAGONAL to see the layers. Serve with berries.

Note: It takes two packages of Anna's Thins if you want to do another flavor other than chocolate. They have ginger, orange and cinnamon almond flavored cookies. They are flower shaped so it is harder to ice the outside and you may not use every cookie.

Mini Pumpkin Tarts

3 packages (15 tarts each) prebaked frozen mini pastry shells (we used Athens Mini Fillo Shells)

1 (15-ounce) can pumpkin

2 cups (plus extra for garnish) frozen whipped topping, thawed

1 teaspoon (plus extra for garnish) pumpkin pie spice

1 (3.4-ounce) package cheesecake-flavor instant pudding and pie filling

Mint leaves (for garnish)

  1. Remove the shells from the freezer and let them thaw at room temperature for 15 minutes.

  2. Meanwhile, combine the pumpkin, whipped topping, and pumpkin pie spice in a medium bowl, whisking until smooth. Add the pudding mix and whisk until smooth and thick.

  3. Spoon about 1 tablespoon of the filling into each of the shells (you can also pipe the filling with a pastry bag or a plastic sandwich bag with one corner snipped off), then top the tarts with whipped topping, a sprinkling of the pumpkin pie spice, and a mint leaf, if you like. Makes 45 tarts.

Pumpkin Chiffon Pie

3+9 inch baked pastry shell
1 envelope unflavored gelatin
1/2 cup white sugar
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1/4 tsp nutmeg
2/3 cup evaporated milk (1 5 fl oz can)
3 eggs, separated
1 1/4 cup canned pumpkin (1 15 oz can)
whipped cream for topping

In saucepan, combine gelatin, white sugar, cinnamon, salt, ginger and nutmeg. Stir in evaporated milk and beaten egg yolks. Cook- stirring over low heat until slightly thickened. Remove pan from heat. Add pumpkin. Chill, stirring occasionally until thickened. Beat egg whites to soft peaks. Gradually add 1/4 cup white sugar. Continue to beat until stiff peaks. Fold egg mixture into pumpkin mixture. Spoon into cooked, baked pie shell. Chill until firm. Top with whipped cream and serve.

Blueberry Stuffed French Toast



1 loaf French bread, ½ sliced 1” thick, ½ cubed
1 8oz package cream cheese, softened
1 to 2 cups blueberries – frozen or fresh
3 cups milk
4 eggs
1/3 cups maple sugar
1 teaspoon vanilla
1 ¼ cup sugar
¼ cup sugar
¼ teaspoon nutmeg
¼ teaspoon cinnamon

Syrup:

1 cup blueberries
Water (just enough to almost cover the berries)
2 Tablespoon corn starch
1 teaspoon butter
Maple syrup to taste
Lemon juice to taste
Whip Cream


-line 9x13 pan with slices of bread (cube the rest) and then spread all the cream cheese on the layer of bread

-sprinkle blueberries on sliced bread, toss bread cubes on top of that, and smoosh it down a little

-mix milk, eggs, syrup, vanilla, and sugar, then pour that over everything slowly
-push bread cubes down a little more with a spoon (helps for absorbing liquids)
-cover and refrigerate overnight
-bake at 350 for 30 minutes with foil on
-remove foil and bake 30 more minutes
-let stand 10 minutes before serving


-While French toast bakes, prepare syrup:
-put blueberries in pot and add water to almost cover.
-add cornstarch (mixed in a small amount of cold water before adding)
-add butter and bring to boil
-mush blueberries while cooking (I use a banana masher)
-boil for a while, till blueberries are mostly mushed and cooked, then add maple syrup to sweeten and lemon juice to intensify blueberry flavor.
-Top individual servings with syrup & whip cream

Clouds

1 box instant Sugar Free Chocolate Jello Pudding
3 cups Milk
Light Whipped Cream

Beat Jello and milk with a whisk for 2 minutes. Set in fridge for 5 minutes. Place two heaping spoonfuls of pudding in bottom of cups. Place one heaping spoonful of whipped cream on top and add an additional layer of pudding then whipped cream. Place back in fridge for additional 5 minutes. Serve.

Strawberry Graham Dessert


1 cup graham cracker crumbs (about 16 squares)
2 tablespoons butter or margarine, melted
1 package (3 ounces) strawberry gelatin
1 cup boiling water
1 package (16 ounces) frozen sweetened sliced strawberries, thawed
1 tablespoon lemon juice
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
Dash salt
1 cup whipping cream, whipped
Fresh strawberries and mint, optional

In a small bowl, combine cracker crumbs and butter; set aside 1 tablespoon for topping. Press the remaining crumb mixture onto the bottom of a greased 8-inch square baking dish. Bake at 325 degrees for 10 - 14 minutes or until golden brown. Cool on a wire rack.

In a bowl, dissolve gelatin in boiling water, stir in strawberries and lemon juice. Refrigerate until partially set, about 1-1/2 hours.

In a small mixing bowl, beat the cream cheese, sugar, vanilla and salt until smooth. Fold in whipped cream. Spread half over cooled crust. Cover and refrigerate remaining cream mixture. Pour gelatin mixture over filling; refrigerate until firm. Top with remaining cream mixture. Sprinkle with reserved crumb mixture. Refrigerate overnight. Garnish with fresh berries and mint if desired.

Yield: 9 servings

Country French Apple Crescent Casserole

1/2 c. plus 2 tbsp. sugar
1/2 tsp. cinnamon
1 (8 oz.) can quick crescent dinner rolls
1 apple, cored, peeled and sliced into 8 pieces
1/2 c. whipping cream
1 tbsp. almond extract
1 egg
1/2 c. sliced almond

Preheat oven to 375 degrees. In small bowl combine 2 tablespoons sugar and cinnamon until well blended. Separate rolls into 8 triangles. Sprinkle mixture over each, pressing mixture in and flattening each slightly. Place apple slice on wide end of each triangle; tuck edges around apple slice.

Roll up, starting at wide end. Seal all seams. Place tip side down in ungreased 9 inch round baking dish, placing long side of 7 crescents around outside edge of dish and 1 in center. Bake for 15-20 minutes or until golden brown.

In small bowl, using wire whisk, combine remaining sugar, whipping cream, almond extract and egg until well blended. Spoon sauce mixture evenly over partially baked rolls. Sprinkle with almonds and cinnamon. Bake an additional 13-18 minutes or until deep golden brown. Cover pan with foil during last 5 minutes of baking time if necessary to prevent excessive browning. Serve warm.
